“I dunno. Pigs tend to chew.”

Over at Serious Eats, J. Kenji Lopez-Alt has the most balanced, well-researched look at the ethics of foie gras I’ve read. The short version: ducks eat like a Simpson, so they don’t suffer from the procedure itself, and there are only three (!) foie farms in the United States, all of which avoid the disturbing practices most people associate with foie. That said, you should really read the whole thing (and everything else with his byline).

Also, ducks breathe through their tongues. The more you know!
